 Serves 4
5 mins to prepare and 1 hr 20 mins to cook
980 calories / serving
Freezable
Ingredients

1 Everyday Value whole chicken, about 1.3kg (2.9lb)
25g (1oz) Everyday Value unsalted butter, softened
1 x 30g pack fresh tarragon
a sprig of fresh thyme
200ml (7floz) Everyday Value white wine
1 x 300g bag shallots, peeled
1 bulb of Everyday Value garlic
175g Everyday Value unsmoked back bacon rashers, chopped
150g (5oz) Everyday Value peas, defrosted if frozen or blanched if fresh
Everyday Value new potatoes, to serve
Everyday Value mixed vegetables, to serve

Preheat the oven Gas 5, 190°C, 375°F. Put the chicken in a roasting tray. Smear the butter all over and season well. Put a large sprig of the tarragon and the thyme into the cavity and pour the wine around, adding a splash of water as well.

Roast for 30mins, then add the whole shallots, bacon and garlic to the tin. Roast for another 40mins, adding a splash more water if the juices in the roasting tray dry up. Lift the chicken with some tongs so the juices run from the cavity. The chicken is cooked if the juices are clear - if they're still slightly pink, cook for a further 10mins.

Stir the peas into the juices around the bird and scatter with some fresh tarragon. Allow to sit for 10mins, then remove from the roasting tin and carve.

Reduce the juices a little to make some gravy and serve with new potatoes and vegetables or salad.

Cooking tip

If you've got leftover chicken, turn it into a tasty and quick chicken salad. Shred the meat and toss it together with boiled baby new potatoes and mixed salad leaves. Just before serving, dress it with extra virgin olive oil and lemon juice or balsamic vinegar.

Takes: 12 mins to prepare and 18 mins to cook
Serves: 4

Andy Water’s Thai chicken soup in a cup is a simple fun recipe with a colourful twist.

Ingredients

2 skinless chicken breasts, thinly sliced
2tbsp rapeseed oil
1tbsp Thai green curry paste
15g fresh ginger, chopped into small matchsticks
350ml light coconut milk
450ml chicken stock
1tbsp fish sauce
150g egg noodles
100g green beans
1 large carrot, cut into matchsticks
25g fresh coriander, chopped
6 spring onions, thinly sliced
1 red chilli, deseeded and thinly chopped
1 lime, cut into 4 wedges

Heat the rapeseed oil in a pan. Once hot, add the Thai green curry paste. Cook gently for 1 minute, then add the chopped ginger.

Gently pour in the coconut milk, chicken stock and fish sauce. Bring to the boil and then turn down the heat, simmer for a minute.

Add the chicken, bring to the boil and then turn down the heat again and simmer for 10 minutes.

Add the green beans and carrots to the soup and simmer for a further 5 minutes.

Meanwhile, in a separate pan, pour enough boiling water over the dry noodles to cover. Bring to the boil and heat until the noodles are tender and cooked, approximately 2 minutes.

Add the coriander and spring onions to the soup.

Drain the noodles and divide between 4 cups - let the kids choose their favourite cups to serve the soup in, the more colourful the better!

Carefully pour the soup over the noodles. Sprinkle the chopped chilli on top and serve with wedges of lime – go light with the chilli, especially if the kids are doing the sprinkling and make sure everyone washes their hands thoroughly immediately afterwards!

Takes: 20mins to prepare, 70mins to cook and 30mins to cool
Serves: 4

This fun and tasty chicken soup will get the kids involved at all level from helping to mash right through to picking the meat off the bones.

Ingredients

2 chicken legs
1 carrot, peeled topped and tailed
1 onion, peeled
1 leek, white part only
100g (3½oz) butternut squash, peeled
1 bay leaf
1 sprig fresh thyme
1tsp salt
2 garlic cloves, unpeeled
1l (1¾ pints) chicken stock, or water to cover
8tbsp pasta animals

Place all of the ingredients, except the pasta, into a pan. Cover with cold water and bring to the boil.

As the water boils, skim off the foam and any impurities such as oil or fat with a large spoon. Reduce the heat, cover, and leave to simmer for approximately 1 hour.

Once the chicken is cooked through and is falling off the bone, remove the pan from the heat. Remove the chicken legs using a slotted spoon and place in a tray to cool.

Strain the remaining liquid through a sieve into a clean pan. Set the vegetables aside.

Place the pan over a low heat and bring to a simmer, the stir in the pasta animals and cook for 5-8 minutes until soft. Turn off the heat.

Meanwhile, mash the vegetables, making sure to pop the garlic cloves out of their skin.

The chicken legs should have cooled by now – get the kids to pick the chicken meat off the bones and roughly chop.

Return the mashed vegetables and chicken to the pan. Heat through and add a pinch of salt and pepper if needed.

Divide the chicken soup across 4 bowls and serve immediately.

Chicken Garbure Recipe

Photo: Chicken Garbure Recipe

The Garbure is a wonderful dish for those chilly winter evenings. Warming, delicious and comforting is how I would describe it. I always serve a bowl of the broth first to my guests, and then for the main course the poached chicken with the root vegetables topped with some fresh truffle. This is the perfect dish for large family gatherings, because most of the work can be done well in advance which will leave you more time to enjoy yourself.

Method

Stock
Combine all the ingredients together in a large pot. Cover with water and bring to the boil. Reduce the heat and simmer gently, stirring regularly throughout the cooking process.

Cook for 6-8 hrs, then pass through a sieve and refrigerate until needed.

Completing the Garbure
Bring 1500mls of the stock to a gentle simmer, season with salt and freshly ground black pepper. Place in the chicken breasts and the vegetable selection and poach gently until they cooked through. The chicken breasts will cook first, about 15 minutes depending on their size, remove and keep warm while the vegetables continue to cook for a further 5 minutes.

Finely sliced the chicken breast and placed into the warm serving bowls. Complete the dish by adding chopped parsley to the Garbure stock and vegetables then your choice of either duck fat or truffle oil. Generously fill the bowls and if you using truffle, grate a little over the top and serve.

One-Pot Tomato & Olive Chicken with Gnocchi Recipe

Photo: One-Pot Tomato & Olive Chicken with Gnocchi Recipe

Serves: 4, On the table in: Up to 60 Minutes

Ingredients

4 large chicken thighs
3 tblsp olive oil, plus extra for drizzling
2 cloves garlic, peeled & crushed
1 small lemon, zest & juice
few sprigs thyme
4 heaped tblsp rough breadcrumbs
1 heaped tblsp roughly chopped flat-leaf Italian parsley
1 x 500g pack potato gnocchi
2 x 190g jars Sacla' Italian Tomato & Olive Stir-in
salt & freshly ground black pepper

Instructions

Preheat the oven to 190°C, 375°F, Gas Mark 5.

Put the chicken in an ovenproof dish, drizzle with a little olive oil, add half the garlic, the lemon juice and some seasoning and rub well to coat. Sprinkle with the thyme.

Roast the chicken on the middle shelf of the oven for 20-25 minutes until golden, basting once or twice. Drain off any excess oil.

Meanwhile, make the breadcrumb mixture. Pour the rest of the oil into a small non-stick frying pan over a moderate heat. Add the rest of the garlic, then the breadcrumbs and fry for 3-4 minutes or until crisp and golden, stirring frequently. Remove from the heat, add the parsley and lemon zest and set aside.

Put a pan of salted water on to boil for the gnocchi. Add the gnocchi to the pan, bring back to the boil, then reduce the heat down a little and cook for 2-3 minutes or until they float to the surface. Drain in a colander.

Next, pour the Tomato & Olive Stir-in around the chicken along with 120ml boiling water, then carefully stir in the gnocchi, and bake for a further 5-8 minutes until the chicken is cooked through and the sauce is piping hot. Remove from the oven, scatter over the breadcrumbs mixture and serve. Buon Appetito!
